Jennifer Floyd over at Floyd Family Adventures recently shared this delicious biscotti recipe with me. This was my first time making biscotti and it was SO easy! It’s especially yummy dunked in your favorite cup of coffee ! You could change up the recipe by substituting your favorite extract in place of vanilla. Enjoy!
1 cup sugar
½ cup vegetable oil
3 teaspoons vanilla extract
2 teaspoons baking powder
3 ¼ cups flour (add more for proper consistency)
Chocolate chips, melted
Almonds, chopped (I used sliced almonds)
Beat eggs until frothy. Beat in sugar until creamy, about 5 minutes.
Add vegetable oil and vanilla extract – don’t over beat.
Add flour and baking powder – don’t over beat.
Divide dough in two log-shaped “lumps.”
Place logs on foil on a greased cookie sheet.
Bake @ 350 degrees for 20 minutes (or a little less). Top will crack slightly.
Remove from oven.
While still warm slice with bread knife. Lay each piece on it’s side. Bake for five minutes, or until edges are a little brown.
Flip each piece over and bake five more minutes.
After the biscotti is cooled, dip one end in melted chocolate and sprinkle almonds over the chocolate.
